If you've brewed pour-over coffee with fresh beans, you've seen the bloom: a dramatic puff and bubble of the grounds when hot water first touches them. It looks impressive. But what's actually happening is chemistry — and understanding it helps you brew better coffee.
What is Degassing?
During roasting, beans undergo rapid chemical changes that produce CO₂ gas as a byproduct. This gas gets trapped inside the bean's cellular structure. After roasting, beans release this CO₂ slowly over days and weeks — this is degassing.
Fresh beans (roasted within the last week) are still releasing significant CO₂. When hot water hits these beans, the heat accelerates the release, and you see the bloom: the grounds puff up and bubble visibly as CO₂ escapes rapidly.
Why Does It Affect Brewing?
CO₂ and water repel each other. When CO₂ is escaping from coffee grounds, it creates a barrier that prevents water from properly penetrating and extracting from the bean. If you pour all your brew water at once onto very fresh coffee, much of the extraction time is wasted while CO₂ is still outgassing.
The bloom step — pouring a small amount of water (roughly twice the weight of coffee) and waiting 30–45 seconds before continuing — allows the initial CO₂ burst to escape before you add the rest of your brew water. This leads to more even, more complete extraction.
How Fresh Is Too Fresh?
Very freshly roasted coffee (within 2–3 days of roasting) blooms so aggressively that it can be difficult to brew well. The CO₂ release is so rapid that even a bloom step doesn't fully solve the problem. Most specialty roasters recommend waiting 5–7 days after roasting before brewing for optimal results.
Does Bloom Matter for All Brew Methods?
It matters most for pour-over (V60, Chemex, Kalita Wave), where even extraction is critical and water contact time is short. For French press and AeroPress, the longer immersion time compensates somewhat for uneven initial extraction, though a bloom still helps. For cold brew, where extraction happens over 12+ hours, bloom is essentially irrelevant.
